I really wanted to make a vegetarian taco… and I always see portobello burgers, so I figure that mushrooms have a great consistency to replace the meat in a dish. I’ve eaten a vegetarian taco before and I really missed the meat. With these, mushrooms really did do a great replacing any kind of meat in a taco! I put an asian flare on these with some soy sauce and sesame oil. YUM!
Recipe:
- 2 8 oz. packages baby bella mushrooms
- 2 8 oz. packages shiitake mushrooms
- 1 tablespoon olive oil
- 1/4 cup soy sauce
- 2 teaspoons sesame oil
- 2 tablespoons honey
- 2 teaspoons ground ginger
- 2 small seedless cucumbers, spiralized or sliced thin
- sesame seeds
- pomegranate
- corn/flour tortillas
Instructions:
- Heat a large pan to medium-high heat
- Add olive oil and mushrooms
- Sautee mushrooms until tender – drain any excess water
- Add soy sauce, honey, sesame oil, and ginger
- Simmer for about 10 minutes
- Heat tortillas until warm
- Assemble tacos – place mushrooms on tortilla and top with cucumber, pomegranate and sesame seeds 🙂 ENJOY!
