This delicious masterpiece was thought up by just thinking about how much I loved english muffins… yup, really.  I once had a really delicious veggie burger – mostly made of sweet potato – on an english muffin.  So I decided to make a bbq chicken burger using ground chicken, bbq sauce, this really tasty mesquite seasoning I have in my cabinet, and topped the burger with apple slices (I LOVE sweet and savory – and the crunch of the apple), tomato, cheddar, pepper jack, spring mix, and caramelized red onion!  YES.

Recipe: (makes 8 burgers)

  • 2 pounds ground chicken, I got one pound dark meat and 1 pound white meat – the dark meat helps the burgers stay moist and juicy
  • 2 tablespoons mesquite seasoning
  • 1 tablespoon all purpose seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped
  • 1/4 cup whole wheat bread crumbs
  • 1/4 cup bbq sauce
  • 2 red onions, sliced thin
  • 8 english muffins, buttered and toasted
  • 2 tomatoes – I used roma tomatoes, sliced
  • 2 small or 1 medium macintosh apple, sliced thin
  • about 1 cup spring mix, or any other lettuce you prefer
  • 1/2 cup cheddar cheese
  • 1/2 cup pepper jack cheese
  • olive oil

 

Instructions:

  1. in a large bowl, combine ground chicken, mesquite seasoning, all purpose seasoning, salt, pepper, paprika, red pepper flakes, bread crumbs, parsley, and bbq sauce – mix together until combined
  2. heat a large skillet to medium-high heat and add 1 tablespoon olive oil
  3. add onions to skillet along with some salt and pepper
  4. cook, stirring frequently, until onions are translucent and caramelized – set aside
  5. heat another large skillet to medium-high heat and add 2 tablespoons olive oil
  6. form ground chicken mixture into burgers – should make about 8 depending on the size of your burger (I made them just the right size to fit on my english muffins)
  7. once your skillet is heated, place 4 burgers in the pan and cover
  8. after about 5 minutes, flip the burgers and cover again, cooking for another 5 minutes
  9. top each burger with cheese while it’s still in the pan and cover for about 30 seconds until cheese is melted
  10. remove burgers from pan and repeat with the next 4
  11. assemble your burgers – place spring mix on the bottom, top with tomato, place the burger on top of the tomato, add more bbq sauce, add apple slices and caramelized onion and top with english muffin top!
  12. ENJOY!
