I used the Dark Chocolate Kodiak Cakes mix to make cookies! I was thinking what I could add to these cookies that would make them unique… dried cherries!! The cherries chunks go really well with the dark chocolate and of course, added chocolate chips!
Recipe:
- 2 sticks butter, softened
- 1 & 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 & 1/2 cups Dark Chocolate Kodiak Cakes mix
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup mini chocolate chips
- 1/2 cup dried cherries
Instructions:
- Preheat oven to 375 degrees
- With an electric mixer, beat butter and brown sugar until fluffy
- Add eggs, one at a time, mixing after each addition
- Add vanilla and mix until combined
- In a separate bowl, add and mix Dark Chocolate Kodiak Cakes mix, baking soda, baking powder, and salt
- Add dry ingredients to wet ingredients in about 3 increments, mixing after each addition until combined
- Add mini chocolate chips and dried cherries and mix until just combined
- Scoop tablespoons of cookie dough onto a baking sheet
- Bake 375 for 8-10 minutes
- Cool on a cooling rack… or eat warm – my favorite!!
