Okay, so this pizza is baking in the oven right now and my house smells like HEAVEN! It’s a combination of fresh cilantro, bbq sauce, red onion, chipotle corn salsa, and shrimp that makes the world go ’round. Seriously. This pizza is made with a super easy homemade crust… no really, it’s SO easy. I have no idea why I don’t make homemade pizza more often! Okay, here we go…
Recipe: (makes 2 large pizzas)
for the crust:
- 3 cups all purpose flour, or whole wheat – I used white whole wheat flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon course black pepper
- 1 packet rapid rise yeast (this is the easiest one to use because you just add it to your dry ingredients! and it works just as well)
- 1 tablespoon all purpose seasoning – whatever kinda you like!
- 1 & 1/4 cups warm water
- 2 tablespoons olive oil
Instructions:
- Add flour, salt, sugar, pepper, all purpose seasoning and yeast to a mixer bowl attached with a dough hook
- mix together
- in a measuring cup, add water and olive oil
- slowly pour water mixture into dry ingredients while the mixer is on low
- once all the water is added, the dough should form a ball
- remove dough from the mixer bowl and put it in another bowl coated with a little bit of olive oil
- cover with plastic wrap and let sit for 30 minutes until dough doubles in size

for the pizza:
- pizza dough
- 1 container chipotle corn salsa (store bought at Whole Foods – they have a ton of freshly made corn salsa in their produce section – you can always use regular corn and season it yourself as well)
- 1 bag frozen, raw shrimp, tails removed and cleaned, thawed
- 2 tablespoons fresh cilantro, chopped
- 1/2 red onion, sliced thin
- 1 cup bbq sauce (whatever brand you like best!)
- 1 bag mozzarella cheese
Instructions:
- Slice each shrimp in half longways
- Sautee shrimp over medium-high heat with olive oil, salt, and pepper – set aside
- Split the dough into two pieces
- Roll out one to fit a cookie sheet – doesn’t have to be a perfect circle
- spray the cookie sheet with non-stick spray and place the dough on the sheet
- squirt about 1/2 cup of bbq sauce over 1 pizza and spread it out with a spoon
- add half of the mozzarella cheese on the bbq sauce
- over the mozzarella, add half container of corn salsa
- add half of the sliced onion on top of the salsa
- add half of the shrimp over top of the onion
- sprinkle with a little more cheese
- add 1 tablespoon cilantro over top of the pizza
- Bake at 400 degrees for about 12-15 minutes, or until crust is golden brown
- Slice and enjoy with ranch or cilantro avocado dressing! (Bolthouse Farms – my favorite!)
