I had a whole box of Brown Rice Krispies in my pantry, and I thought… Rice Krispy Treats! Then I thought, how could I make these a little different than the original rice krispy treat? I could use some almond butter – vanilla espresso almond butter! I added some vanilla coffee creamer and WAH-LAH… Vanilla Espresso Rice Krispy Treats!


  • 6 tablespoons (3/4 stick) butter
  • 1/3 cup vanilla espresso almond butter
  • 2 tablespoons vanilla coffee creamer (I used Califia)
  • 4 cups marshmallows
  • 1 cup mini marshmallows
  • 5 cups brown rice cereal


  • in a large pot, melt butter, almond butter, and vanilla coffee creamer together until smooth
  • add regular-size marshmallows
  • stir mixture until smooth and marshmallows are melted and incorporated with butter and almond butter
  • add brown rice cereal, one cup at a time to make sure everything gets coated
  • add mini marshmallows and mix until evenly incorporated
  • line a 9×9 pan with wax paper
  • transfer krispy treats to the pan, pressing down until the pan is filled and top is flat
  • refrigerate for about an hour to set
  • remove from the fridge and cut into squares
  • serve and enjoy!
