chocolate coffee cupcakes & vanilla espresso caramel buttercream.

I made a recipe combining all three brands of Wild Friends, Kodiak Cakes, and Bizzy Coffee! Then I thought, which flavors would be good together? Hmm… chocolate Kodiak Cakes, Vanilla Espresso Wild Friends Almond Butter, and Bizzy Coffee! I decided to make cupcakes to combine all of these flavors into a delicious and delightful treat!

Recipe: (makes about 10 cupcakes)

For the cupcakes:

  • 1 cup Chocolate Kodiak Cakes mix
  • ¼ cup brown sugar
  • 2 tablespoons butter, melted
  • ½ cup almond milk
  • 1/3 cup Bizzy Coffee
  • 1 teaspoon baking powder
  • 1 egg
  • 1 teaspoon vanilla extract

For the icing:

  • ½ cup (1 stick) butter, softened slightly
  • 1/3 cup Wild Friends Vanilla Espresso Almond Butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons caramel sauce (I used caramel ice cream topping syrup)
  • 3/4 cup powdered sugar


For the cupcakes:

  • preheat oven to 350 degrees
  • in a large bowl, combine Kodiak Cakes mix, brown sugar, and baking powder together
  • add egg, almond milk, Bizzy Coffee, melted butter, and vanilla extract and whisk until just combined
  • fill cupcake liners with batter until about ¾ full
  • bake for about 16-18 minutes or until knife/toothpick comes out clean
  • let cupcakes cool

For the icing:

  • with an electric mixer, beat butter and almond butter together
  • add vanilla and caramel sauce and mix until combined
  • add powdered sugar, ¼ cup at a time, mixing after each addition
  • once icing is smooth and cupcakes are cool, use a knife or piping bag to frost cupcakes!
  • Serve and enjoy!
