This is everything good in one bowl. I love anything fajita or taco related. In fact, I think if you asked me what my favorite food was… I would have to say TACOS! So here, I made a whole bunch of deliciousness that’s also super fun to eat in this tortilla bowl!
RECIPE: (serves 4)
- 6 chicken thighs, boneless and skinless
- 1 packet fajita skillet sauce (any kind/brand you like)
- 1 can black olives, drained
- 1 can black beans, rinsed and drained
- 2 medium size tomatoes, diced
- ½ head romaine, chopped
- 1 large sweet onion, sliced thin
- 2 peppers, sliced thin (I used yellow and orange)
- 1 avocado, sliced or mashed
- 4 whole grain tortillas (I used Tumaro’s brand – 60 calories, high fiber, high protein)
- 1 lime, cut in quarters
INSTRUCTIONS:
- Place chicken thighs in a slow cooker with the fajita skillet sauce
- Turn slow cooker on the “low” setting and cook for 4-6 hours
- After chicken is cooked, pull apart with two forks
- Heat a large pan on medium-high heat
- Drizzle pan with olive oil and add peppers and onions
- Cook peppers and onions until brown and caramelized, stirring frequently (about 10 minutes)
- Preheat oven to 350 degrees
- Bake tortilla until crispy – I had these little tortilla bowl molds that worked fantastic! But you can use a Pyrex bowl if you have one
- Fill your tortilla bowl with pulled chicken, black beans, chopped romaine, diced tomatoes, black olives, peppers and onions, and avocado
- Garnish with a lime slice – Enjoy!
