Peanut butter is one of my favorite things in the world! So when Kodiak Cakes came out with their new Peanut Butter Powercake mix, I was super excited. I used this mix to make peanut butter cookies. I added some mini peanut butter cups to the batter, along with some sea salt on top. It’s the perfect combination of sweet and salty! This is a must-try recipe.
Recipe:
- 1/2 cup butter (1 stick), softened slightly
- 1/2 cup brown sugar
- 1/4 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 and 3/4 cup peanut butter Kodiak Cakes mix
- about 10 mini peanut butter cups – I used Justin’s, crushed
- course sea salt, for topping
Instructions:
- preheat oven to 375 degrees
- with an electric mixer, beat butter and brown sugar on medium speed until fluffy – about 3 minutes
- add vanilla and egg and mix until smooth
- in a separate bowl, mix Kodiak Cakes mix, salt, and baking soda
- add dry ingredients to wet ingredients in about 3 increments, mixing after each addition
- add crushed peanut butter cups and mix until just combined
- scoop tablespoon size balls of batter onto a greased baking sheet
- flatten out with a fork, then cross over your fork lines and flatten again (not too flat, just to make the fork marks)
- sprinkle each cookie with course sea salt
- bake for 8-10 minutes (I always under-bake my cookies a little bit so they’re softer when they cool – I baked mine for 8 minutes)
- remove from the oven and let cool on a cooling rack
- enjoy!
