vanilla espresso & coconut donuts.

Happy National Donut Day!  This is a day that must be celebrated.  Who doesn’t love donuts?! I used a couple of my favorite brands (Kodiak Cakes and Wild Friends) to make these delicious vanilla espresso & coconut donuts.  Another great thing about this recipe is that it’s super protein packed!  Healthy can be tasty! 🙂

RECIPE: (makes 12 donuts)

  • 2/3 cup Wild Friends Vanilla Espresso Almond Butter
  • 1/4 cup (1/2 stick) melted butter
  • 2 eggs
  • 1/2 cup shredded coconut
  • 1 teaspoon vanilla extract
  • 1 cup almond milk
  • 1 cup Kodiak Cakes Power Cakes mix
  • 1/2 cup dark chocolate candy melts (baking chocolate that hardens)
  • shredded coconut for topping

INSTRUCTIONS:

  • preheat oven to 350 degrees
  • in a large bowl, combine almond butter, eggs, butter, vanilla, and almond milk
  • whisk until smooth – your arm may get sore.. but it’s worth it.
  • add coconut and Kodiak Cakes mix
  • mix until just combined
  • grease a donut pan, fill each one 3/4 full with batter
  • bake for about 10-12 minutes, or until knife comes out clean
  • while donuts are cooling, melt your dark chocolate in the microwave and mix until smooth
  • when the donuts are cooled, dip the top of each donut into the dark chocolate, then coat half with shredded coconut
  • let chocolate harden, and serve!
