peanut butter & banana muffins.

Perfect combination: peanut butter and banana.  When I was young, I always used to have peanut butter and banana sandwiches.  Sometimes I would add fluff… YES.  I got the peanut butter flavored Kodiak Cakes mix, and decided to make muffins!  I added creamy peanut butter for extra peanut butter taste along with super ripe bananas, which make the muffins deliciously moist.

RECIPE: (makes 12 muffins)

  • 1 and 1/2 cup crunchy peanut butter Kodiak Cakes mix
  • 3/4 cup brown sugar
  • 2 very ripe bananas, mashed
  • 1/4 cup creamy peanut butter (I used Justin’s)
  • 1/2 cup almond milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder


  • preheat oven to 350 degrees
  • in a large bowl, mix Kodiak Cakes mix, flaxseed, brown sugar, and baking powder together
  • in a separate bowl, mix banana, egg, peanut butter, vanilla, and almond milk
  • add the dry ingredients to the wet ingredients in about 3 increments, mixing after each addition
  • line cupcake tins with wrappers, and fill with batter about 3/4 full
  • bake for 18-20 minutes, or until knife or toothpick comes out clean


  1. What do you suggest as a replacement and how much if you can’t eat bananas? 1/2 cup of greek yogurt? Applesauce?
