Ever since the new Kodiak Cakes flavors (dark chocolate and crunchy peanut butter) came out, I’ve been obsessed! If you’re not familiar with what Kodiak Cakes is, it’s a pancake and waffle mix – the BEST pancake and waffle mix ever. In this recipe, I have used the crunch peanut butter flavor to create a baked oatmeal! Then I topped it with melty peanut butter. YES.

RECIPE: (serves 3-4)

  • 1 cup crunchy peanut butter Kodiak Cake mix
  • 1/3 cup plus 1 tablespoon brown sugar
  • 3/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 cup plain oatmeal, Old Fashioned or regular (I used Purely Elizabeth original oatmeal)
  • 2 tablespoons butter, melted
  • creamy peanut butter, for topping


  • Preheat oven to 350 degrees
  • In a large bowl, combine Kodiak Cakes mix, brown sugar, and 1/2 cup oats
  • add 1 tablespoon melted butter and almond milk to the dry ingredients and whisk until smooth
  • in a separate bowl, add the remaining 1/2 cup oats, 1 tablespoon brown sugar, and 1 tablespoon melted butter
  • mix oats and butter together until oats are coated and mixed together
  • grease a casserole or round dish with non-stick spray (mine was 10×6)
  • add pancake mix mixture to the baking dish
  • top the mix with oat mixture and press mixture down slightly into the batter
  • bake for 15-20 minutes or until toothpick comes clean (it’s okay to under-bake because there are no eggs)
  • Remove from oven and drizzle melted peanut butter all over before serving 🙂 I also ate mine with almond milk in a bowl!
