spicy black bean vegetarian tacos.

Cinco de Mayo is coming up fast and I really wanted to do a vegetarian taco! There are so many types of different diets out there (vegan, vegetarian, gluten free, soy free, paleo, etc.) it’s really hard to make everyone happy! All of the taco recipes I have on my blog are with some type of meat, so I was like “I need one with only vegetables!! And just because these tacos don’t have meat in them doesn’t mean they’re super full of protein, fiber, and flavor. Let’s get to it!

RECIPE: (makes about 8 tacos)
note: every ingredient is measured after it’s been sliced or diced (ha.. slice and dice)

  • 1 can black beans, drained and rinsed
  • 2 mangos, diced
  • 1 cup pomegranate seeds
  • 1 jalepeno, sliced into 8 pieces (one for each taco)
  • 1/2 cup red onion, diced
  • 1 avocado, sliced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup hot sauce
  • 1/4 cup plain Siggi’s yogurt or sour cream
  • 1/4 cup panko bread crumbs
  • 1 egg, beaten
  • 1/4 cup all purpose flour
  • 8 corn tortillas
  • olive oil
  • salt & pepper to taste

INSTRUCTIONS:

  • to fry the jalepenos, heat up a small pan on high heat
  • place flour, beaten egg, and panko bread crumbs in three separate small bowls
  • coat the bottom of the pan with olive oil
  • take the sliced jalepeno and dip coat in the flour, dip in the egg, then coat in bread crumbs
  • place into the pan and fry until golden brown on the first side, then flip
  • cook on the other side then remove and place on a plate with a paper towel to soak up the oil
  • to warm the black beans, heat up a small pan on medium-high heat
  • add about 1 tablespoon of olive oil, then add black beans
  • add cumin, paprika, red pepper flakes, and salt & pepper to taste (make sure the can of black beans doesn’t have salt added to it before you add salt to the pan – you don’t want it too salty!)
  • remove black beans from heat once warmed and seasoning is mixed through
  • in a small bowl, mix hot sauce and yogurt/sour cream together to make the sauce
  • assemble the tacos – sauce, black beans, avocado, mango, red onion, pomegranate, and 1 fried jalepeno on top
  • let’s eat!
