carrot cake toaster waffles.

Make em. Freeze em. Toast em. Eat em.

These are very easy – super convenient for a busy morning! Make them the night before, a week before, a MONTH before… Freezing food comes in handy – especially if you make it yourself! That way you can be super proud that you made something so delicious and healthy  for a nutritious breakfast on a work morning.  Not to mention, they’re carrot cake flavor.  You can make any flavor you want!  I just love the fact that you can make something healthy that tastes like carrot cake… why wouldn’t you want to eat dessert for breakfast everyday?!

RECIPE: (makes about 10 waffle quarters)

  • 1 & 1/4 cup Kodiak Cakes Power Cakes mix
  • 1/4 cup ground flaxseed
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • 1 cup unsweetened almond milk
  • 1/2 cup grated carrots
  • 1/4 cup raisins
  • 1/4 cup unsweetened shredded coconut


  • set your waffle maker on high
  • in a large mixing bowl, add Kodiak Cakes mix, flaxseed, cinnamon, cloves, and nutmeg and combine
  • add egg whites, vanilla, and almond milk and mix
  • fold in grated carrots, raisins, and coconut
  • grease waffle maker on both sides
  • add batter almost all the way full –  not too full because it will overflow over the sides
  • cook until waffle maker “ready” light comes on
  • remove and transfer to cooling rack
  • repeat with the rest of the batter
  • once the waffles are cooled, cut them in quarters
  • layer them with wax paper and put them in a large freezer bag
  • store them in the freezer until you want to eat em!  then toast em up and top them with any toppings you want! 🙂
