Who loves crispy, fried cheese? You know that cheese leftover on the pan from a grilled cheese? Yes. Add artichoke and fresh herbs… and you get artichoke waffle fritters. Using a waffle maker is the key in this recipe. It holds everything together while making the fritters crispy. If you don’t have one… I suggest you get one because why wouldn’t you want to make waffles every day of your life? Honestly.
RECIPE:
- 2 cans artichoke quarters (low sodium, packed in water)
- all purpose garlic & herb seasoning (I got this from Whole Foods and I use it for EVERYTHING! – if you do not have this, use garlic powder, salt & pepper to your taste)
- 1 egg
- 1/4 cup shredded pepper jack cheese
- 1/4 cup shredded mozzarella cheese
- 1/3 cup panko bread crumbs
- 2 tablespoons all purpose flour
- 2 tablespoons fresh parsley, chopped
INSTRUCTIONS:
- heat waffle maker on high
- chop the artichoke quarters into smaller pieces so there are no huge chunks
- mix all the ingredients in one large bowl
- grease waffle maker on both sides
- add about 2 tablespoons, 4 times, of the artichoke mixture onto the waffle maker so it makes 4 separate small waffles (4 should fit, but it depends what waffle maker you have)
- close and cook until the “ready” light comes on
- carefully transfer to a plate to cool (they will get easier to handle once they’re cooled)
- repeat with the rest of the mixture
- YUM!!

they’re amazing!! I put a couple in my salad today and they add so much extra flavor! My sister put one in her chicken wrap today. so versatile and so tasty!!
