garlic shrimp & parmesan bake.

 

Sometimes I forget how much I love shrimp.  It’s super easy to make and it cooks very fast for a quick, delicious meal!  I combined shrimp and parmesan cheese, and added crispy prosciutto, fresh parsley, diced tricolor tomatoes and panko bread crumbs.  This dish is perfect for an appetizer at a party or a main dish with pasta or rice!  YUM!

RECIPE:

  • 1 16oz bag of raw, peeled, no tail, deveined jumbo shrimp (about 40-45 shrimp)
  • 3 tablespoons fresh parsley, chopped
  • 1 4oz package prosciutto
  • about 12 tricolor tomatoes (mix of yellow, orange and red), diced
  • 2 cloves garlic, minced
  • olive oil
  • 1/4 cup panko bread crumbs
  • 1/2 cup grated parmesan cheese, plus2 tablespoons for topping
  • salt & pepper to taste

INSTRUCTIONS:

  • preheat oven to 400 degrees
  • add raw shrimp to a large bowl
  • coat with olive oil (about 2 tablespoons)
  • add fresh parsley, tomatoes, 1/2 cup parmesan cheese, garlic, salt & pepper (I did not add any salt because prosciutto and cheese are salty enough already!)
  • toss until everything is mixed
  • in a medium skillet, heat to medium-high heat
  • cook prosciutto until crispy
  • transfer prosciutto to a cutting board and chop into bits
  • add prosciutto to the bowl of shrimp and mix
  • add shrimp to a large dish (I used a pie dish, casserole dish works too)
  • top with 2 more tablespoons of parmesan cheese and panko bread crumbs
  • bake for 20 minutes or until cheese is bubbly and shrimp is cooked through
  • top with more fresh parsley
  • serve and enjoy 🙂
