black bean & dark chocolate brownies.

Posted by

I had posted a black bean brownie recipe about 2 years ago and I decided to revamp the recipe by using more simple ingredients!  The last one had chocolate pudding mix in the recipe, which made it super fudgey… and I certainly wasn’t mad about it!  Although it was delicious, my outlook on food has changed since then.  I’m looking to create recipes without ingredients with artificial sweeteners and chemicals.  So, here we have a delicious black bean brownie recipe that includes ingredients that you should feel good about eating!

RECIPE: (makes 8 brownies)

  • 1 15.5 oz can black beans, drained and rinsed (i used organic, low sodium)
  • 1/3 cup brown sugar
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 egg + 2 egg whites
  • 2 tablespoons coconut oil, melted
  • 1/4 cup unsweetened almond milk
  • 1/3 cup dark chocolate chips

INSTRUCTIONS:

  • add everything to a medium size bowl or blender
  • blend until smooth – if using a bowl, use a hand blender
  • pour into a greased 9 x 5 baking dish
  • sprinkle with chocolate chips
  • bake at 350 degrees for about 20-25 minutes or until knife or toothpick comes out clean
  • let cool
  • cut into squares and serve!
