Wild Friends got me again! This was another one of the seasonal flavors I purchased a few weeks ago. I decided to make some pumpkin spice peanut butter cookies! They turned out amazing. I actually ended up making a cookie ice cream sandwich with salted peanut gelato 🙂 SOO good!
RECIPE:
- 1 & 1/4 cup flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1/2 cup unsalted butter (1 stick), softened
- 2/3 cup Wild Friends Pumpkin Spice peanut butter
- 2/3 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
INSTRUCTIONS:
- with an electric mixer, cream butter, peanut butter, brown sugar, and vanilla extract until fluffy
- add egg and mix until smooth
- in a separate bowl, add flour, baking soda, salt, pumpkin pie spice and cinnamon and mix
- add dry ingredients to wet ingredients in about 3 increments, mixing well after each addition
- use a small ice cream scoop and place cookings on a greased baking sheet
- press down with a fork to make the cookies flatter, then press down parallel to the lines you just made (the classic peanut butte cookie look)
- bake at 375 for about 8-10 minutes (i do 8 minutes because I like my cookies softer)
- cool on a wire rack
- enjoy!
