cranberry, orange, & ginger muffins.

I received some Purely Elizabeth products in the mail to try out!  The one product was the mango almond muesli, which I have never tried muesli in my life!  So, I am very excited to try that.  The other product was the cranberry pecan ancient grain granola + puffs cereal.  I cannot find this in stores, so again, very excited.  I thought about what I could do with it besides just having it for breakfast with almond milk and banana (YUM!).  I thought about muffins and how it would be a good topping, kinda of like streusel, except healthier.  I then saw that I had a orange & ginger flavored Siggi’s yogurt in my fridge and WAH-LAH… cranberry, orange, & ginger muffins were born.  Perfect for breakfast or brunch… or a snack with tea 🙂

RECIPE: (makes 12 muffins)

  • 1/4 cup earth balance butter spread (or regular butter, softened)
  • 1/3 cup brown sugar
  • 1 egg
  • 1 5.3 oz container of Siggi’s orange & ginger yogurt (you can use vanilla or plain if you like)
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1 & 1/3 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 teaspoon cinnamon
  • 3/4 cup almond milk
  • 1/2 cup dried cranberries
  • Purely Elizabeth cranberry pecan ancient grain granola + puffs cereal

INSTRUCTIONS:

  • with an electric mixer, cream the butter and sugar together until fluffy (2-3 minutes)
  • add vanilla, egg, orange zest, and yogurt and mix until smooth
  • in a separate bowl, add flour, cinnamon, ginger, cloves, salt, baking soda, and baking powder
  • whisk until combined
  • add flour mixture to wet ingredients in about 3 increments, alternating with almond milk
  • mix after each addition until combined
  • fold in dried cranberries
  • put batter in a cupcake tin with liners and fill each 3/4 up
  • top each muffin with granola + puffs cereal (about 1 tablespoon on each)
  • bake at 350 degrees for 18-20 minutes or until toothpick comes clean
  • enjoy!
