yogurt & granola pancakes.

we all know that yogurt and granola goes together like pb&j.  my favorite combination is Siggi’s vanilla yogurt with Purely Elizabeth blueberry hemp granola!  so, one morning i was really craving pancakes… but instead of the usual pancakes topped with syrup, i decided to layer them with yogurt and jam and then top it off with my favorite granola 🙂 it was probably the best idea i have ever had.  you can choose whichever kind of granola and yogurt you prefer!

RECIPE:

  • 1/2 cup Kodiak Cakes mix
  • 1/2 cup almond milk
  • 1 egg white
  • 3 tablespoons jam (i used my homemade blueberry chia jam – recipe below)
  • 1/4 cup yogurt (i used Siggi’s vanilla)
  • 1/4 cup granola (i used Purely Elizabeth blueberry hemp)

INSTRUCTIONS:

  • mix kodiak cake mix, egg white, and almond milk together in a small bowl
  • cook pancakes until golden brown
  • put the first pancake on a plate and spread some jam over top
  • place another pancake on top and spread some yogurt on top
  • repeat with the rest of the batch
  • top with more jam, yogurt, and granola! (i did not use syrup, but you can drizzle some honey or maple syrup over top!)

RECIPE:

blueberry chia jam:

  • 1 cup blueberries
  • 2 tablespoons water
  • 2 tablespoons chia seeds
  • sweetener of choice – i used stevia – you can use sugar to your taste!

INSTRUCTIONS:

  • place blueberries in a small sauce pan
  • add water
  • boil until blueberries warm up and “pop”
  • add sweetener & chia seeds
  • take off the heat and let sit until the chia seeds plump up (about 10 minutes)
  • let cool and store in a small mason jar & refrigerate

note: the jam will get thicker as it sits in the fridge!

  1. These look amazing! I’m gluten free and the purely Elizabeth products are so great! Do you have a recommendation for gf pancake mix?
