{mini} vanilla bean & honey glazed chai donuts.

I found a mini donut pan yesterday!  I have a regular donut pan, but the mini one just looked so cute.  I decided to make a donut that you don’t see every often.  Today I was drinking some tea (chai tea) and it inspired me to make chai donuts!  And what did I glaze these little baby donuts with?  A deliciously sweet honey glaze.  Because honey is often put into tea! 🙂 Make these for brunch or simply to snack on – with a cup of tea, of course.

     

RECIPE: (makes 24 mini donuts)

note: I didn’t make the actual donut too sweet because the honey glaze on top does the trick!  Feel free to add some honey to the batter for extra sweetness!

  • 1 cup whole wheat pastry flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup vanilla Siggi’s yogurt
  • 2 chai tea bags
  • 1/2 cup water
  • 1 tablespoon coconut oil (melted)
  • 1 tablespoon cinnamon
  • 1/4 teaspoon cloves
  • 1/2 teaspoon ginger
  • 2 tablespoons honey
  • 2 tablespoons powdered sugar
  • 2 tablespoons unsweetened vanilla almond milk
  • 2 teaspoons vanilla bean paste

INSTRUCTIONS:

for the donuts:

  • place flour, baking powder, cinnamon, ginger, cloves, and salt in a small bowl and mix together
  • in a separate bowl, add yogurt, egg, 1 teaspoon vanilla bean paste, and brown sugar and mix together until smooth
  • in a small sauce pan, add water and boil
  • add tea bags to water and steep for about 5 minutes
  • add a couple ice cubes to cool it off to luke warm temperature (don’t worry about watering it down – it will still have a strong tea flavor)
  • pour tea into wet ingredients and mix until smooth
  • add dry ingredients to wet ingredients in about 2-3 increments, mixing together after each addition
  • add coconut oil and mix well
  • grease a mini donut pan and bake at 350 degrees for about 5-7 minutes (they’re small so they don’t take long!)
  • let cool on a wire rack

for the glaze:

  • in a small bowl, combine honey, 1 teaspoon vanilla bean paste, vanilla almond milk, and powdered sugar
  • once the donuts are cooled, dip donuts face down into glaze and place back on the wire rack
  • serve immediately & enjoy!
