these cookies are super soft and chewy… my favorite kind of cookie! i used vanilla bean + espresso flavored Barney Butter – delicious! a perfect wake-me-up!
RECIPE:
1/2 cup vanilla bean + espresso Barney Butter
1/4 cup coconut oil, melted
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1/2 cup whole wheat flour
1/4 ground flaxseed
1/4 cup old fashion oats
1 teaspoon baking soda
1/2 teaspoon salt
with an electric mixer, beat Barney Butter and coconut oil together
add brown sugar and mix well for about 1 minute on medium-high speed
add egg and vanilla extract and blend
in a separate bowl, mix flour, flaxseed, oats, baking soda and salt
add dry ingredients to wet ingredients in about 3 increments, mixing well after each addition
spread cookie dough out on a cookie sheet using a cookie scooper and bake for 10-12 minutes until cookies are golden brown (i take mine out of the oven while they’re still a little doughy- 10 minutes- that way they stay soft!)
let cool on a cooling rack and enjoy!
i ate mine with Siggi’s plain yogurt and raspberries for breakfast <3
