chicken teriyaki burgers + green apple & cabbage slaw.

i wanted to make sunday dinner for my boyfriend’s family and this is what i came up with!  i made chicken burgers with an asian twist and topped it with something sweet, tangy and crunchy.  perfect combination!

     

RECIPE:

for the burgers:

(makes about 6 burgers-depending how big)

2 packages ground chicken

1/2 cup chopped scallions

1/4 cup veri veri teriyaki sauce

pepper to taste

2 tablespoons olive oil

mix everything in a large bowl

form into patties with a small dent in the middle so the burgers cook evenly

cook on grill for about 8 minutes each side or until done (depending on the size of the burgers)

for the slaw:

1 large granny smith apple, julienned

2 cups red cabbage

2 cups asian cabbage slaw

1/2 cup Siggi’s plain yogurt

2 tablespoons honey

juice from 1 lemon

1 tablespoon olive oil

salt & pepper to taste

     

in a large bowl, mix apple, red cabbage, and asian cabbage slaw

in a separate bowl, mix yogurt, lemon juice, honey, olive oil, and salt & pepper

add yogurt mixture to slaw & apple mixture and blend carefully until all of the slaw is coated

serve burgers with toasted whole wheat hamburger buns and top with slaw!
