if you know me, i love incorporating fruit into anything! i originally thought of making a mango salsa with corn, but corn and mango are both yellow and i thought it wouldn’t look as nice. i decided to go with papaya because it has a creamier texture than mango and the corn has a crunchy feel. i added some spice with jalepeno and tang with some lime juice. perfect for summer!
RECIPE:
- 1 ripe papaya, diced (you can tell it’s ripe just like mango or avocado, if it’s a little soft)
- 1/4 large red onion, minced
- 5 ears of corn
- juice from 2 limes
- 2 tablespoons olive oil
- 2 tablespoons cilantro, chopped
- 2 jalepenos, seeds removed and diced
- salt & pepper to taste
INSTRUCTIONS:
- in a large bowl, add papaya, red onion, lime juice, cilantro, jalepenos, and olive oil
- boil corn for about 5 minutes
- transfer to grill and roast on all sides until grill marks appear and corn is tender but still crunchy
- slice corn off the cobs and let cool
- add corn to papaya mixture and blend carefully
- serve with tortilla chips 🙂
