papaya & roasted corn salsa.

if you know me, i love incorporating fruit into anything!  i originally thought of making a mango salsa with corn, but corn and mango are both yellow and i thought it wouldn’t look as nice.  i decided to go with papaya because it has a creamier texture than mango and the corn has a crunchy feel.  i added some spice with jalepeno and tang with some lime juice.  perfect for summer!



  • 1 ripe papaya, diced (you can tell it’s ripe just like mango or avocado, if it’s a little soft)
  • 1/4 large red onion, minced
  • 5 ears of corn
  • juice from 2 limes
  • 2 tablespoons olive oil
  • 2 tablespoons cilantro, chopped
  • 2 jalepenos, seeds removed and diced
  • salt & pepper to taste


  • in a large bowl, add papaya, red onion, lime juice, cilantro, jalepenos, and olive oil
  • boil corn for about 5 minutes
  • transfer to grill and roast on all sides until grill marks appear and corn is tender but still crunchy
  • slice corn off the cobs and let cool
  • add corn to papaya mixture and blend carefully
  • serve with tortilla chips 🙂
