kale & farro salad with prosciutto & figs.

prosciutto + figs is probably one of the best combinations since tomato and mozzarella or chocolate and peanut butter!  i love anything sweet and salty.  i also love farro.  farro is a grain that has a nutty flavor and chewy texture.  i especially like that it’s a little chewier than quinoa.  it is a great healthy substitute for rice or pasta because it’s a great source of complex carbohydrates, protein and fiber.  one serving of farro (1/4 cup dry) contains a whopping 7 grams of protein and 7 grams of fiber compared with brown rice which contains 5 grams of protein and 3.5 grams of fiber.  okay so, here’s the recipe!



1 package farro (5 servings)

about 8 fresh figs, diced or quartered

about 5 cups baby kale greens, chopped (i got a big package from wegmans and used about 2/3 of the package)

5 pieces of thinly sliced prosciutto, crisped in a frying pan and chopped

1/3 cup olive oil

juice from 2 lemons

3 tablespoons honey pepper to taste

note: i did not add any salt because prosciutto is salty already 🙂

cook farro according to instructions

in a big bowl, add chopped kale and olive oil

add hot farro to kale and mix until kale is wilted

add prosciutto, lemon juice and honey and mix

once cooled, add figs and blend well

serve immediately or store in fridge for up to a week enjoy! OLYMPUS DIGITAL CAMERA
