i got this idea from one of my sister’s best friends. she told me she made a pasta salad with fresh garlic and olive oil.. and i thought “i’m doing that!” it turned out to be a great summer dish for any occasion 🙂
RECIPE:
1 pound orecchiette pasta (or whatever pasta you prefer)
2 pints cherry tomatoes (sliced or halved)
1 package arugula
about 1 and 1/2 cups pearl-sized fresh mozzarella (you can keep these whole, but i actually cut them in half to make them smaller)
1/4 cup olive oil
1 clove garlic (minced)
salt & pepper to taste
cook pasta according to instructions and drain
in a large bowl, add garlic, olive oil, arugula, salt and pepper
dump hot pasta into bowl and mix gently until arugula is wilted
when pasta is cooled, add tomatoes and mozzarella
serve immediately or store in the fridge 🙂
