Thinking back to where I was a year ago, I’ve realized I have come such a long way. Easter was a great realization of this. I was not in the right state of mind a year ago. I was taking classes at Burlington County College for my prerequisites for my Masters. Although I am now attending Northeastern University, I was planning on going to Drexel. I was killing myself to get good grades, taking 6 classes at once to get done by a certain time so I could apply to Drexel. My mind was only looking down one path. I felt like I was looking so far ahead, and I wanted to have my degree so bad so I could finally do something in relation to nutrition. I didn’t realize I was wasting my life away! I was not enjoying life in the moment I was in. Unfortunately, Drexel did not work out, and I was devastated. I then applied to Northeaster, and I’ve been taking classes since September. This is proof that everything works out for a reason, even if it doesn’t go as planned! Don’t give up just because something didn’t go like you pictured. The pieces will fall into the right places.
So, let’s get back to how my Easter was! I cooked Easter breakfast, which was spinach and zucchini frittata, maple apple chicken sausage, strawberries, maple granola, and fresh squeezed orange juice from whole foods! (DELICIOUS)
My family then went to my Grandparent’s house for Easter dinner. It was delicious as always and there was so much food. The best part of it was that I got to see my Grandparents. They’re adorable. 100% French with heavy French accents, and they cook the BEST food. They had made deviled eggs, but made them into chicks! SO CUTE.
After dinner, my sister and I got our Easter baskets. No one is ever too old for Easter baskets! Plus, there was a bottle of wine in each of them. Perks of being over 21 on Easter!
I then handed out some Easter treats to all of my family that I made before dinner. They contained Easter colored m&ms, annie’s bunny grahams, white chocolate chips and sprinkles!
My boyfriend came with me to Easter dinner and I’m always thankful to have him by my side, no matter what. What more could I ask for?
I am very thankful that I have a great, loving family and wonderful Grandparents (that are great cooks!!) I have come such a long way, and it made my Easter even more enjoyable.
