carrot cake with maple vanilla bean cream cheese frosting.

i made this carrot cake because we’re going to my grandparents house for dinner for Easter. i always thought carrot cake was the perfect Easter dessert. so, i volunteered to be in charge of the cake! 🙂

carrot cake:
i found this WONDERFUL carrot cake recipe HERE

note: i made a simple carrot cake, but you can always add raisins, walnuts, coconut, pineapple, etc.

maple vanilla bean frosting:
1 8oz pack cream cheese (room temp)
2 sticks (1 cup) unsalted butter (room temp)
1 tablespoon vanilla bean paste OR 1 tablespoon vanilla extract
1/4 cup maple syrup
1 cup powdered sugar

with an electric mixer, beat butter and cream cheese until smooth
add vanilla bean paste and mix until combined
add powdered sugar, 1/4 cup at a time, mixing after each addition
add maple syrup and mix until smooth and fluffy

frost cooled cake
top with whatever you please! i topped mine with walnuts and spiralized carrots
