blueberry crumble.

this is so simple and has just the right amount of sweetness!

RECIPE:
32 ounces fresh blueberries (2 16oz cartons)
2 tablespoons white sugar
1/4 cup brown sugar
1/2 cup oats
1/4 cup whole wheat flour
3 tablespoons butter (softened slightly)
1 teaspoon vanilla extract
2 tablespoons fresh lemon juice

in a large bowl, carefully mix blueberries, lemon juice and white sugar until all blueberries are coated
in a separate bowl, use a large fork and work the butter, oats, whole wheat flour, brown sugar, vanilla, and butter together until small crumbles form
note: this is why you don’t want the butter melted (so the crumbles form) or too cold (so it’s hard to mix together)
grease a large pie dish or rectangular baking dish
pour blueberries into the dish and cover with the crumble
bake at 350 until blueberries are bubbly and crumble is browned slightly (about 20-25 minutes)

serve warm with whipped cream and/or vanilla ice cream!
