breakfast oatmeal sweet breakfast

apricot chia granola with coconut and pumpkin seeds.

i absolutely LOVE this granola recipe. i’ve made two big batches so far to add to my oatmeal every morning 🙂

3 cups old fashioned oats
1/2 cup chia seeds
1/2 cup pumpkin seeds
1/2 cup shredded unsweetened coconut
1/3 cup melted coconut oil
1/2 cup brown sugar
1 tablespoon vanilla extract
1/2 cup diced dried apricot
1/4 cup almond milk

in a large bowl, mix oats, chia seeds, coconut, pumpkin seeds and brown sugar together
add vanilla extract and coconut oil and combine until coated evenly
add almond milk and continue to combine
spread evenly on a baking sheet and bake for about 30 minutes, mixing the granola every 10 minutes to ensure even cooking and to make sure burning doesn’t occur along the edges
once nicely browned, cool on the baking sheet until completely cool
add apricot chunks and fold in until evenly dispersed throughout the granola
store in tupperware to add to yogurt, oatmeal, eat with almond milk or just alone!
