banana nut granola.

this granola smells and tastes like a banana muffin.

3 cups old fashion oats
1/2 cup brown sugar
1/2 cup chopped walnuts
1/2 cup chia seeds
1/3 cup melted coconut oil
3 mashed bananas
1/4 cup almond milk
1 tablespoon vanilla extract
mini chocolate chips

in a large bowl, combine oats, chia seeds and walnuts
in a separate bowl, combine mashed banana, vanilla extract and almond milk
add banana mixture to oats and combine
add melted coconut oil and fold until combined
on a large baking sheet, spread the oats mixture evenly onto surface of sheet
bake at 350 for about 30 minutes, mixing oats about every 10 minutes everything bakes evenly
let granola cool on baking sheet
once cooled, add granola to a large bowl and mix in mini chocolate chips (there was no measure for these, add as much as you want!)

store in tupperware containers for breakfast or snack 🙂
