christmas tree chocolate chip cookie sandwiches & chocolate peppermint swirl cupcakes.

christmas time is here!!  here are some treats that are sure to WOW your guests at your christmas dinner party or get together 🙂

RECIPE (cookie sandwiches):

follow ‘chocolate chip cookie sandwiches’ recipe previously posted EXCEPT:

add 2 tablespoons cinnamon to dry ingredients

once dough is formed, wrap in wax paper and refrigerate for 1-2 hours until firm

cut dough into sections and flour your surface generously

flour a rolling pin and the top of your piece of dough

roll dough out until about 1/2 inch thick

using a christmas tree cookie cutter, cut trees and place on a cookie sheet

freeze tree cut outs for about 5-8 minutes

bake at 375 degrees for 8-10 minutes until slightly browned

note #1: i always take my cookies out of the oven a little under done so they stay soft!  i usually stick with 8 minutes depending on the size of your cookies!  use your judgement

note #2: it is very hard to keep these cookies in tree form!  i recut my cookies after baking so they were perfect trees 🙂

let cookies cool and make them into sandwiches with buttercream (recipe in a previous post) and decorate with edible christmas decor !


RECIPE (cupcakes):

one batch of hershey’s perfectly chocolate cake (the only chocolate cake recipe i use!)

for the buttercream:

2 sticks unsalted butter (room temp)

1 and 1/2 teaspoon peppermint extract

1 teaspoon vanilla extract

2 and 1/2 cups powdered sugar

2 tablespoons heavy cream

with an electric mixer, beat butter while adding 1/4 cup of powdered sugar at a time, blending after each addition

add vanilla and peppermint extracts

add heavy cream and beat on medium-high speed for 30 seconds to 1 minute until fluffy and creamy

how to pipe:

using a piping bag with round attachment, use a toothpick and dip it in red food coloring

create 3 long lines along the sides of the piping bag, each the same distance apart and parallel to each other

add buttercream and squeeze until you see red in the icing

add onto cupcakes in a circular motion until you get cover the whole cupcake in buttercream

add crushed candy cane to each cupcake
