Happy Halloween! i bought a bunch of Halloween bone sprinkles and these cute little sugar candy eyes, so i figured i would try them out and make these cookies a little creepy 🙂
RECIPE:
for the pumpkin pie snickerdoodles:
- 2 and 1/4 cup all purpose flour
- 1 and 1/2 cup white sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs
- 2 sticks butter
- 1 tablespoon vanilla extract
- 2 tablespoons cinnamon
- 1 teaspoon pumpkin pie spice
- 1/4 cup pumpkin puree
- 1 cup crushed graham cracker
INSTRUCTIONS:
- cream butter and sugar together with an electric mixer on medium speed until fluffy (about 3 minutes)
- in a separate bowl, blend flour, baking soda, salt, cinnamon and pumpkin pie spice and set aside
- in another separate bowl, beat eggs, vanilla and pumpkin puree until smooth
- add pumpkin egg mixture into butter and sugar mixture and mix until combined
- add the dry ingredients in 3 increments, mixing 30 seconds after each addition
- add crushed graham crackers
- using a small ice cream scoop, scoop the cookies onto a greased baking sheet
- bake on 350 degrees for 8-10 minutes
note: i baked mine for about 8 minutes because they were smaller cookies and i wanted them to be really soft
- once cooled on a cooling rack, add eyes or coat in white chocolate and add sprinkles!
note: you can always roll these in sugar and/or cinnamon before baking
for the death by chocolate peanut pretzel:
- 2 and 1/4 cup all purpose flour
- 1/2 cup white sugar
- 1 cup dark brown sugar
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs
- 2 sticks butter
- 1 tablespoon vanilla extract
- 1/3 cup mini chocolate chips
- 1/3 cup regular chocolate chips
- 1/3 cup crushed chocolate covered pretzels
- 1/3 cup crushed peanuts
note: i estimated the measurements for the chocolate chips, etc- you can always add more of what you like best
INSTRUCTIONS:
- beat butter, sugar and vanilla with an electric mixer on medium speed until fluffy (about 3 minutes)
- add eggs one at a time, mixing well after each egg is added
- in a separate bowl, blend flour, baking soda, cocoa powder and salt
- add dry ingredients to wet ingredients in 3 increments mixing well after each addition
- add pretzels, peanuts and chocolate chips
- with a small ice cream scoop, scoop cookies onto a greased baking sheet and bake at 350 for 8-10 minutes
- same as with the pumpkin pie snickerdoodles, i baked mine at about 8 minutes so they were soft
- top with bone sprinkles! (press them into the cookie while soft)
