I got shaved brussel sprouts from Wegmans and I really wanted to make something interesting with them! So here it is!
note: you can leave out the quinoa to have cheesy brussel sprout goodness! I made another batch after without quinoa, and it’s just as delicious.
1 and 1/2 cups quinoa
2 cups shaved brussel sprouts
1 sweet onion (diced)
1/3 cup chicken or vegetable stock
1/4 cup heavy cream
1/3 cup parmesan cheese
1 teaspoon garlic powder
1 teaspoon ground black pepper
1/2 teaspoon paprika
cook quinoa according to instructions and set aside
in the medium pot on medium-high heat, drizzle olive oil and cook onion until translucent
add shaved brussel sprouts and chicken stock and cook until brussel sprouts are tender
add heavy cream and parmesan cheese and mix well
mix in quinoa
