RECIPE (muffins):
1 cup whole wheat flour
1/2 cup ground flax seed
3/4 cup brown sugar
1 and 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/2 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1/3 cup pumpkin puree
2 eggs
1/3 cup coconut oil (melted)/canola oil
1 cup vanilla almond milk
combine all dry ingredients in a large bowl and blend well
add wet ingredients, except coconut oil, and mix together until smooth
add melted oil to the batter and mix until incorporated
divide evenly into muffin tins and bake at 375 for about 20-25 minutes or until a toothpick comes out clean… i used bigger muffin tins, if you use cupcake tins then it will take less time in the oven!
RECIPE (spiced maple cream cheese):
2 tablespoons cream cheese
1 and 1/2 tablespoons maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice
1 tablespoon powdered sugar
add all ingredients in a small bowl and mix with a whisk until smooth
drizzle or top the cream cheese mixture over the cooled muffins and enjoy! (or eat warm.. my favorite 🙂 )
