pistachio crusted chicken.

I was going over my cousins house for the day to lay out by the pool and have lunch… so i decided to bring over a nice summer salad with strawberries, cucumbers and baked chicken breast. I thought, “how could i make this chicken more interesting?”. so i make a breading out of pistachios and ground flax seed. it’s super simple and SO good. here’s the recipe!

4 chicken breasts
1/2 cup pistachios
1/4 cup ground flax seed
1 tablespoon ground pepper
3 egg whites

place egg whites in a bowl
in a food processor, grind pistachios, leaving bigger chunks and not too fine
in a separate bowl, mix pistachios, flax seed and pepper together

note: i did not use salt because the pistachios have a lot of saltiness to them!

dip each chicken breast in pistachio mixture, then egg whites, then pistachios again until all the chicken is coated
place on a baking pan covered in aluminum foil
bake at 350 degrees for about 20-25 minutes until chicken is cooked through and breading is golden brown
let chicken sit for about 10 minutes
