cream parmesan pumpkin quinoa.

i once had this pumpkin risotto when i was out to eat in philly.. decided to try the same concept with quinoa!

RECIPE: (9 servings)
1 package quinoa
1/2 cup heavy cream
1/2 cup milk (any kind)
2 cups canned pumpkin
1/2 cup parmesan cheese
1 tablespoon black pepper (i love pepper!)
1 teaspoon salt
2 cups spinach leaves (finely chopped)

cook quinoa as the instructions say on the label
in a separate sauce pan, add heavy cream, pumpkin, milk, cheese, salt and pepper
let everything melt together, stirring occasionally

once quinoa is done, add pumpkin parmesan sauce and blend
add spinach a little at a time so the heat from the quinoa wilts the spinach

serve! such a comforting dish for fall 🙂
