cinnamon raisin swirl muffins.

my favorite combination! cinnamon and raisins.

RECIPE:
batter:
1 and 1/2 cup whole wheat flour
1/4 cup brown sugar
1/4 cup truvia baking blend
2 teaspoons baking powder
2 tablespoons coconut oil (melted)
2 eggs
1 tablespoon vanilla extract
1/2 cup raisins
1 tablespoon cinnamon
pinch salt

cinnamon mixture:
5 dates
1/4 cup vanilla almond milk
1 tablespoon cinnamon

in a large bowl, mix truvia, brown sugar, flour, baking powder, 1 tablespoon cinnamon and salt together until well combined
in another bowl, mix eggs, coconut oil and vanilla extract
add the wet ingredients to dry ingredients
add almond milk (about 1/2 cup) until you get a smooth batter like consistency
fold in raisins

in a food processor or blender, blend dates, 1/4 cup almond milk and 1 tablespoon cinnamon (you may want to soak the dates for a few hours so they get softer, so easier to blend, but if you have a good blender (vitamix, ninja) then they’ll blend easy.
this is your cinnamon mixture to make the “swirl” in each muffin

in a muffin tin, fill each muffin tin about 1/2 way and then add a little of your cinnamon mixture, topping it off with more batter until 3/4 full
take a tooth pick and swirl each muffin, being careful not to mix it too much
you want to be able to see the swirls!

bake at 375 degrees for about 12-15 minutes or until knife comes out clean
enjoy!
