I love Chinese food!! so I decided to make a healthier version of sesame chicken! with brown rice and steamed broccoli of course!
4-5 chicken breasts (trimmed of fat and cubed)
1 & 1/2 cup whole wheat flour
3 whole eggs
1/2 cup low sodium soy sauce
1/4 sup rice wine vinegar
1/2 cup brown sugar
1/4 cup ketchup
1/2 cup honey
1 tablespoon red pepper flakes
1 tablespoon cornstarch
for the sauce, mix ketchup, soy sauce, honey, red pepper flakes, rice wine vinegar and brown sugar together in a large bowl
add cornstarch in a little at a time so it doesn’t clump, stirring continuously until all of it is incorporated
in a separate bowl, crack eggs and slightly beat
in another bowl, add the flour
dip the cubed chicken in the egg and then into the flour until coated
in a large skillet on medium-high heat, add about 1 tablespoon of olive oil and brown the chicken cubes only until browned on the outside
you’ll have to do this in batches, adding more olive oil each time because there’s a lot of chicken 🙂
in a baking pan, add chicken and pour sauce over top
note: the sauce will be thin, but it will thicken once baked!!
bake at 325 for about 30-45 minutes, stirring the chicken so it gets coated evenly with the sauce
the chicken should now be cooked all the way through and the sauce should be thick!
remove from oven and sprinkle with sesame seeds
serve with brown rice and vegetable of your choice!!
