so I really want to put the recipe up for the shredded chicken I used in my quesadilla! it came out so good. I used a tumaro 60 calorie whole wheat wrap and filled it with sautéed peppers and onions, mozzarella and cheddar cheese, jalepenos and shredded chicken. I then folded it over like a quesadilla and grilled in a small pan until golden brown and crispy on each side. I cut it into 3 pieces and served it with my pineapple guacamole and light sour cream. amazing!
1 package chicken breast tenderloins
1/3 cup bbq sauce
1 tablespoon cumin
1 tablespoon red pepper flakes
1 teaspoon paprika
1 tablespoon chili powder
1 and 1/2 teaspoon garlic salt
1 teaspoon onion powder
feel free to add more spices according to your taste buds 🙂
I thought the bbq sauce would make it taste too much like bbq chicken.. but it ended up tasting exactly like taco seasoned chicken! the spices really help out.
trim the fat off your tenderloins
in a small dutch oven pot on medium heat, add 1 tablespoon olive oil
once heated, add chicken and reduce heat to medium-low
rotate chicken to cook all sides
add bbq sauce and spices
reduce heat to low, cover and let simmer for about 1 hour, stirring occasionally
note: make sure it’s lightly simmering. if it isn’t, turn the heat up a little!
covering the pot will help keep the chicken moist, so it’s easy to shred!
once your hour is up, take a fork and tongs and shred your chicken, it should be easy to break apart!
WAHLAH! you’ve done it. add it to fajitas, tacos, quesadillas, salad… or eat it alone!
