since it’s snowing all day and i can’t go anywhere… time to bake!! one of my favorite kinds of muffins is lemon poppyseed. i think lemon flavor cake is very underrated. i love it!!
1 and 1/2 cups whole wheat flour
1/4 cup plus 2 tablespoons truvia baking blend OR 3/4 cup white sugar
2 teaspoons baking powder
1/3 cup almond milk
2 tablespoons coconut oil (melted)
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 teaspoon lemon zest
1 tablespoon lemon juice
1 tablespoon poppyseeds
mix all dry ingredients together and then add wet ingredients by folding them in, careful not to over mix
if batter seems too dry, add more almond milk
bake at 400 degrees for about 15 minutes or until knife comes out clean
