been wanting to make these for the longest time! when i was little, my grandparents owned a bakery. i LOVED their linzer cookies with the raspberry jam and powdered sugar on top… so i wanted to make my own version and they came out super soft and moist!
RECIPE:
1/4 cup coconut oil (solid)
1/4 cup brown sugar
1/4 cup truvia baking blend/1/2 cup white sugar
1 egg
1/2 cup applesauce
1 tablespoon vanilla extract
1 teaspoon almond extract
1 and 1/4 cup whole wheat flour/white flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
beat coconut oil, brown sugar, white sugar and extracts with an electric mixer until combined
add egg and applesauce and blend well
in a separate bowl, combine flour, cinnamon, baking powder and baking soda
add dry ingredients to wet ingredients in about 3 increments, blending well with each addition
scoop cookies on a baking sheet and make a thumbprint in the middle of each cookie
add a dollop of raspberry jam to each print and bake until edges are golden brown
cool cookies on a cooling rack
