with the holidays right around the corner, i figured i would experiment with cookies! i love oatmeal raisin cookies.. but i decided to replace the raisins with chocolate chips. you can do either!! this is a healthier version of oatmeal cookies that i think everyone will love!
1 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon nutmeg
2 cups old fashion oats
2 tablespoons coconut oil (solid)
1 cup brown sugar
1 teaspoon vanilla extract
1/3 cup unsweetened applesauce
1 cup chocolate chips/raisins
with an electric mixer, beat brown sugar and coconut oil
once blended well, add egg and mix
add vanilla extract and applesauce
in a separate bowl, combine flour, salt, cinnamon, nutmeg, baking soda, baking powder and oats
in about 3 increments, add flour mixture to wet ingredients and blend after each addition
fold in chocolate chips
bake at 350 degrees for about 10-12 minutes until edges become browned and middle is still soft!
let cool on a cooling rack and enjoy!
