eggless banana chia chocolate chip muffins.

RECIPE: (makes 12 muffins)
1 &1/2 cup whole wheat flour
1/2 cup brown sugar
1 tablespoon coconut oil (melted)
2 tablespoons maple syrup
2 tablespoons chia seeds (soaked in 1/4 cup water for 3-5 minutes)
2 very ripe mashed bananas
1/2 cup almond milk
vanilla extract
1/2 teaspoon baking soda
1 teaspoon baking powder
mini chocolate chips

mix flour, brown sugar, spices, baking soda and baking powder together in a large bowl
in a separate bowl, mix soaked chia seeds, mashed banana, coconut oil and vanilla extract together
add wet ingredients to dry ingredients then add almond milk
fold in chocolate chips

bake at 350 degrees in muffin tins for about 10-12 minutes or until knife comes out clean
