cider donuts are one of my FAVORITE things about fall! so instead of going to buy a bag, i decided to make a homemade batch!! and i also decided to bake them instead of fry them. let me know howww you likeee ๐
RECIPE:
2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup apple cider
1/3 cup maple syrup
1/4 cup brown sugar
1/4 cup apple sauce
1 tablespoon coconut oil (any kind of oil will do! ex: canola, vegetable, corn)
1 teaspoon nutmeg
1/2 teaspoon cloves
1 tablespoon cinnamon
1/2 teaspoon allspice
2 egg whites
preheat oven to 350 degrees
grease a donut pan
in a large bowl, mix flour, baking soda, baking powder, brown sugar, salt and spices
in another bowl, mix apple cider, apple sauce, coconut oil (melted) and maple syrup
add wet ingredients to dry ingredients and blend well
in another small bowl, add egg whites and beat them until stiff peeks form
fold your egg whites into your batter until just incorporated (do not over mix)
add batter to your donut pan and bake for about 8 minutes or until knife comes out clean! they should be nice and fluffy ๐
apple cider glaze:
3/4 cup powdered sugar
3 tablespoons apple cider
mix these two well until it turns into a thick glaze
if it’s too thin, add more sugar
if it’s too thick, add more cider
brown sugar coating:
1/4 cup brown sugar
1/4 cup white sugar
when the donuts are just cooled enough, dip both sides of each donut into the apple cider glaze until just coated and then right into your brown sugar mixture and put on a cooling rack!
