i wanted to try this SO bad since i had just pureed a bunch of dried figs. these came out PERFECT!!
1/4 cup oat flour
2 tablespoons coconut flour
2 tablespoons greek yogurt
1/3 cup egg whites
1/4 cup almond milk
1 tablespoon pb2
1 tablespoon cinnamon
1 teaspoon vanilla extract
about 4-5 dried figs pureed
1 teaspoon vanilla protein powder
1 teaspoon baking powder
in a small sauce pan, add pureed figs, 1 tablespoon almond milk and protein powder
wait until it all melts and blends together, then remove from heat
in a large bowl, combine oat flour, coconut flour, pb2, baking powder and cinnamon
then add wet ingredients: egg whites, almond milk, greek yogurt
mix well to combine
prepare your skillet on medium heat
start pouring your pancakes onto the skillet
once each pancake is almost done on it’s first side (bubbles start forming), add a scoop of your fig puree that you prepared before to the middle of each pancake, forming about a half dollar size circle in the middle
take a little bit more batter and cover up the fig puree that you just scooped on, then flip!
stack your pancakes onto your plate, and when you cut into them, they should look like mine 🙂 ENJOY!
