blueberry banana poppyseed muffins.

i wasn’t going to put this recipe up until i made these again.. but i decided i don’t think there is anything that needs to be changed! every time i eat one it’s more and more delicious πŸ™‚ they came out a little flat.. but they’re so moist and enjoyable!

RECIPE:
1 and 1/2 cup whole wheat flour
1 whole egg plus 2 egg whites
1/2 cup brown sugar
1/2 cup greek yogurt
1/2 cup unsweetened applesauce
2 ripe mashed bananas
1 cup blueberries
3/4 teaspoon baking powder
1 teaspoon vanilla extract
1 and 1/2 teaspoon cinnamon
pinch salt
poppyseeds
vanilla almond milk

mix bananas, yogurt, applesauce, eggs and vanilla extract together in a large bowl
in another bowl, mix flour, baking powder, cinnamon and salt
add flour mixture to wet ingredients in 3 increments, blending well after each
add almond milk until desired consistency
sprinkle in poppyseeds and blueberries, folding blueberries in so you don’t crush them!

bake at 350 degrees for about 12-15 minutes or until knife comes out clean! enjoy warm with peanut butter… duh! πŸ™‚
