fresh mozzarella stuffed chicken burgers.

fresh mozzarella stuffed chicken burgers over romaine and spring mix with tomato, cucumber pesto salad with a balsamic reduction drizzle

for the burgers (makes 4)
1 package ground chicken
fresh mozzarella (4 slices)
1 cucumber (sliced)
cherry tomatoes (halved)
4 tablespoons fresh pesto (prepared or homemade)
2 heads of romaine
2 cups spring mix
garlic and wine seasoning
1 tablespoon fresh basil (chopped)

put ground chicken in a bowl and mix with garlic and wine seasoning and basil
to make the burgers, put a scoop of ground chicken on a cutting board with an indent in the center
place a fresh piece of mozzarella in the center
put another scoop of ground chicken on top to form the burger
make sure you cover all the mozzarella

on medium-high heat, cook the burgers in about 1 tablespoon olive oil for about 7 minutes on the first side, flip and cover for about 7 minutes on the second side (covering will keep the moisture in the burgers 🙂 )

for the balsamic reduction:
1/4 cup balsamic vinegar
2 tablespoons honey
1 teaspoon garlic salt

in a small sauce pan, bring balsamic vinegar, honey and garlic salt mixture to a simmer
let simmer and reduce until the mixture gets syrupy
run a spoon against the bottom of the sauce pan
if you can see the bottom when doing this, it’s done!
be careful not to over cook, it will burn

for the salad:
chop romaine heads and split between 4 bowls along with spring mix
in a bowl, combine sliced cucumber and cherry tomatoes
add pesto and mix until everything is coated with pesto
split this mixture between the 4 bowls
add a chicken burger to each bowl and drizzle with balsamic reduction! cut into you burger and see the fresh mozzarella ooze out! so delicious 🙂
