who doesn’t love the classic chocolate and vanilla flavors? i have recently perfected my buttercream icing as well πŸ™‚

RECIPE:
for the vanilla:
1 and 1/2 sticks butter (room temperature)
1 cup sugar
1/4 cup brown sugar
3 eggs
1 and 1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon vanilla extract
1/4 cup almond milk

with an electric mixer, beat butter and sugars together until fluffy
add vanilla extract
add eggs one at a time blending after each

in another bowl, mix flour, baking powder, baking soda and salt

add flour mixture to wet ingredients in 3 increments until blended well
add almond milk and mix

bake at 350 degrees in cupcake tins for about 10-12 minutes or until knife comes out clean

for the chocolate:
repeat vanilla recipe

in a small sauce pan, melt 1/2 cup chocolate chips, 3 tablespoons heavy cream and 1/4 cup cocoa powder
after melted let cool and add to vanilla batter

bake at 350 degrees in cupcake tins for about 10-12 minutes or until knife comes out clean

buttercream icing:
for the vanilla buttercream:
2 sticks butter (room temperature)
3 cups powdered sugar
1/4 cup heavy cream
1 teaspoon vanilla extract

with an electric mixer, beat butter until fluffy
add powdered sugar 1 cup at a time
mix well after each addition
add vanilla extract
add heavy cream and beat for about 2 minutes until super fluffy!

for the chocolate buttercream:
repeat vanilla buttercream recipe

in a small sauce pan, melt 1/4 cup chocolate chips, 1/4 cup cocoa powder and 2 tablespoons heavy cream
let cool and add to vanilla buttercream and mix well

you’re done!!! perfect, classic vanilla and chocolate cupcakes πŸ™‚
