mint and lime mojito cupcake with lime cream cheese frosting.

RECIPE:
for the cupcakes:
2 and 1/4 cups all purpose flour
1 cup sugar
1/4 cup brown sugar
1 teaspoon baking soda
2 teaspoons baking powder
2 sticks butter (room temperature)
3 eggs
pinch salt
1 teaspoon vanilla extract
1 teaspoon lime zest
juice from 1/2 lime
1/2 teaspoon mint extract
2 teaspoons mint leaves (chopped)
1 tablespoon vegetable oil
vanilla almond milk

in a large bowl, combine flour, baking powder, baking soda and salt

with an electric mixer, beat butter, sugar and brown sugar
add eggs one at a time, mixing after each one
add vanilla extract

add dry ingredients to wet ingredients in 3 increments mixing after each addition
batter will get thicker
add almond milk until you get the right consistency (about 1/2 cup)

in a small sauce pan add vegetable oil and chopped mint leaves and put over medium-high heat until it bubbles
stir for about a minute and remove from heat
(i did this so the oil catches onto all the flavor of the mint leaves)

add oil to the batter (do not strain mint leaves)
add lime zest, lime juice and mint extract

fold everything into the batter until well blended

bake in cupcake tins at 350 degrees for 10-12 minutes or until knife comes out clean

for the lime cream cheese frosting:
1 8oz package philadelphia cream cheese
1 stick butter (room temperature)
3 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon lime zest
juice from 1/2 lime

with an electric mixer, beat cream cheese and butter until smooth
add powdered sugar, 1 cup at a time
once smooth and fluffy, add vanilla extract, lime zest and lime juice and blend well

ice your cupcakes with a pretty attachment on your piping bag and garnish with a slice of lime and mint sprig!
