chocolate banana baileys cupcake with brown sugar baileys buttercream and chocolate ganache drizzle.

RECIPE:
for the cupcakes:
2 and 1/4 all purpose flour
3/4 cup sugar
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
pinch salt
3 eggs
1 teaspoon vanilla extract
2 bananas (mashed)
1 cup almond milk
1/2 cup semi-sweet chocolate chips
1/4 cup cocoa powder
1/2 cup baileys liquor

in a large bowl, combine flour, baking powder, baking soda and salt

with an electric mixer, beat butter, sugar and brown sugar
add eggs one at a time, mixing after each one
add vanilla extract
add mashed bananas

in a small sauce pan, combine almond milk, chocolate chips and cocoa powder and put on medium-high heat and stir until chocolate chips are melted and mixture is smooth
remove from heat

add dry ingredients to wet ingredients in 3 increments, mixing after each addition
add chocolate mixture
add baileys and blend well

bake in cupcake tins at 350 degrees for about 10-12 minutes or until knife comes out clean

for the brown sugar baileys buttercream:
2 sticks butter (room temperature)
2 cups powdered sugar
1 cup brown sugar
1/4 cup baileys liquor
1 teaspoon vanilla extract

with an electric mixer, beat butter until smooth
add powdered sugar, one cup at a time
add brown sugar and mix
add vanilla extract and baileys and blend well

ice each cupcake and top with a slice of banana

for the chocolate ganache:
1/2 cup semi-sweet chocolate chips
2 tablespoons butter

with a double broiler, melt butter and chocolate chips together
once smooth, remove from heat and let cool for about 10 minutes

drizzle on top of each cupcake πŸ™‚

this is one of the best combinations!!
